Calling All Alkalarian Homemakers

The following are a couple of Shelley Young's
recipes from her Back to the House of Health
books. I would highly recommend you have
all her books in your kitchen!

Tofu Italian Mock Meatballs

1 cu cooked brown and wild rice
2 stalks celery
1 med red onion
2 cloves garlic
2 lbs firm tofu, crumbled
1 cu vegetable stock (Pacific Foods)
1/4 cu whole rolled oats
2 T pHlavor mineral salts
2 cups basil
2 cups parsley
1/4 t pepper
2 t Zip or cayenne pepper
1.5 cups sprouted wheat tortilla (9 tortillas) crumbs
1 T olive oil
Spice Hunter's Herbes de Provence

Basically, the above are mixed in a food processor,
cooked in an electric skillet and stirred till
slightly sticky and form easily into balls. Place
40 one-inch balls on cookie sheets and bake at
400 degrees for 25 minutes.

Baked Falafel Fritters

8 oz (1 cu) black-eye beans soaked overnight
1/4 cu parsley
1/4 cu cilantro
1 1/2 cups canned chickpeas (15 oz)
1 clove garlic
1 t Cumin
1 T Tumeric
1 red hot chili pepper, seeds & ribs removed
1 T Lime juice
3 T flour (spelt, millet, whole wheat)
(2 heads butter lettuce or savoy cabbage
6 cherry tomatoes)
1/3 cu soft tofu
1 T sesame seeds
1 t Real Salt
1/4 cu red onion.

Combine in food processor.
Drop onto cookie sheet. Makes 1.5 dozen. Bake
at 350 degrees 11 minutes. Brush w/ olive oil
and bake till golden brown.

Serve each fritter warm on a piece of lettuce or
cabbage cup Garnish w/ remaining onions, tomatoes,
and seeds! Also tasty in a wrap or pita sandwich!

Wow! if we make new Alkalarian recipes once or
twice a week, before long, we'll build these and
veggie casserole type recipes till we have 20-30
new standbys to replace our old meat and potatoes!
